New Year 2012
Each month Tony and David Higgins will be giving give their personal recommendations, including comments on the coffees and teas they have found particularly pleasing. Here are their selections.
PERSONAL TASTING NOTES FROM DAVID HIGGINS -
Tea
We have three new Assam teas in stock which are all organically grown on the Belseri tea estate. Assam tea is noted for a strong full-bodied after-taste and traditionally makes very good tea at breakfast time. Malty Assams are especially favoured and Assam Belseri Malt is a Tippy Golden Flowery Orange Pekoe grade black tea with an exceptionally malty flavour. I like it brewed for 3.5 minutes and served with a little milk. The Assam Garden Mark Belseri TGFOP is slightly milder with a drier finish but still very aromatic and ideal drunk black or with just a dash of milk. Finally we have Assam Broken Orange Pekoe which is the strongest of the three. Best brewed for 3 minutes and drunk with milk it is ideal as a strong breakfast tea or for drinking throughout the day.
Coffee
We are slowly coming to the end of our stock of El Salvador Pacamara Rainforest Alliance certified coffee which is available as a medium and a very dark roast. This coffee is very popular and those customers visiting us at Duke Street are always impressed with its exceptional aroma and flavour. The medium roast is sweet and mild with very little acidity. The very dark roast is smooth and strong but retains a delicate sweetness. The Las Delicias coffee estate has had terrible problems this season and almost no coffee has been produced of this type. Our next consignment of Pacamara arriving in the early spring will be from a new supplier in Honduras.
