Lakyrsiew Winter White 2011 £87.50 per 25g

LaKyrsiew’s most desirable production is the Winter White 2011, produced in
the final weeks of the tea year. The slow growth, favourable weather and
very strict leaf selection gives a tiny crop of enchanting, complex white
tea.


This tea deserves time. The vibrant, downy leaves give notes of juniper,
anise and liquorice root. Secondary notes are unripe mango and citrus. When
infused carefully the tea gives is a zing on the palate and an uplifting
sensation. The finish is long. Infuse 4g per 250ml at 70C for 3 minutes.

The leaves are carefully packed into a jar to protect them from moisture.

Jun Chiyabari Evergeen £9.50 per 50g

Jun Chiyabari is a young boutique garden in Nepal's Hile region. Instead of trying to recreate 'Darjeeling like' teas Jun Chiyabari has blazed a new trail creating a distinctive 'Nepalese' style.

The estate is family owned and run by Bachan and Lochan Gyalwali who constantly innovate new methods of production and experiment with techniques learned from other regions.

Jun Chiyabari Evergeen is a whole leaf twisted green tea. Naturally sweet with a fresh sap point and a hint of raw cocoa and butterscotch in the finish. Unusual in that there is no astringency. Infuse for 3 minutes at 70C. A further 2 infusions are possible.

Jun Chiyabari Himalayan Imperial £5.70 per 30g

Himalayan Imperial Black tea has long straight leaves with tippy golden streaks. The aroma is earthy and once infused red fruit acidity is released which is counter balanced by a rich cocoa like after-taste. Best brewed for 3 minutes at 95C. A further two infusions are possible.

Nishi San Ichibancha Sencha £15.00 per 30g

An early 2011 picking Ichibancha Sencha from the Nishi-San tea gardens in Kagoshima, Japan's southernmost tea region. The dry leaves give a berry sweetness. Once infused a beautiful balance of sweetness followed by citrus, grass and umami in the finish.

Best made by placing 5g into a vessel. Add water at 75 degrees centigrade and infuse for 1 minute. Leave to cool before drinking. A second infusion is possible for just 10 seconds.
