The Coffee
A truly indulgent coffee, Colombia Pacamara Las Margaritas is grown on the Las Margaritas farm, renowned for its commitment to quality, innovation and sustainability.
The Pacamara bean is a hybrid between the Pacas natural mutation of the Bourbon variety, and the Maragogype mutation of the Typica varietal. Hence the name Pacamara.
The beans are naturally processed by laying the ripe cherries in the sun, carefully turning them to ensure even drying. As they dry, the cherries swell and resemble large chocolate Maltesers before the dry outer layers are removed. This has a profound effect on the flavour.
We roast this coffee medium to bring out the light, citrus acidity and fruity notes of boozy ripe cherry and pineapple.
