Brazil Yellow Bourbon with Dark Velvet Praline - Mr Higgins Recommends

This month's Mr Higgins Recommend comes from our collaboration with The Highland Chocolatier. It is Mr Tony's favourite pairing, Brazil Yellow Bourbon and Dark Velvet Praline.

Working with Iain on this journey of taste was a great joy and certainly an education. Though we have been working with coffee for most of our lives, we have been amazed by how this project has helped us to enjoy our coffees in an entirely new way.

Brazil Bourbon is one of our most popular single origin coffees. This deliciously lively coffee has a subtle medium body with a sweet caramel sweetness, chocolatey richness and a hint of nut at the finish.

The Yellow Bourbon bean variety is believed to take its name from a single coffee tree presented by the Dutch to King Louis XIV of France in 1713. Seedlings were later transported to the French Island of Bourbon, now called Reunion.

Our Brazil Yellow Bourbon coffee is grown on the Daterra Farm. This is a farm collective comprising of 216 micro farms, each with individual characteristics. They are leaders in sustainable production and innovation in the coffee industry and were the first farm in Brazil to become Rainforest Alliance certified.

With its delightful nutty characteristics, the Brazil Yellow Bourbon is perfectly matched with the Dark Velvet Praline.

The hazelnut praline has a light caramel flavour with a touch of roast cocoa. Paired, this truffle emulates the natural sweetness of the coffee.

For February I am recommending one of my favourite light roasted coffees, Guatemala Nueva Granada from Central America. Grown high up in the remote area of San Marcos in sight of Central America’s highest mountain with its twin peaks, the extinct volcano, Tajumulco.
