Galapagos San Cristobal coffee is often revered as one of the world’s best. The micro-climate in this region is ideal for coffee production. The coffee is shade grown and fed by natural spring water from a crater lake in the mountains. The farm is often blanketed in a warm Galapagos Islands sea mist and this combination of circumstances allow the coffee cherries to develop slowly at a relatively low altitude for coffee cultivation. Certified bird-friendly, the farm protects the delicate indigenous song birds. All the removed coffee cherry pulp is re-used as fertiliser on the farm.

A light roast coffee which is rich, medium to full, with a subtle hint of sweet acidity. Quite simply the most balanced coffee we have ever tasted. Try it once and you will be hooked.

We recommend brewing this coffee as a filter or pourover. Use 18g of finely ground coffee per 250ml of water.

H.R. Higgins sources all of its coffee through long-established relationships with individual coffee farms, cooperatives and trusted coffee partners. In most cases, we have direct relationships with farmers which span decades.

Sustainability is a hugely important factor to us as a business and now, more generally in the wider coffee industry. The most important part of the entire coffee process is that the coffee farmers, their families and their communities all benefit from our relationships. Specifically, we work with farms that care for the local environment, and support both their workers and their families. This is the first and most crucial step in the process of producing exceptional coffee.
