How Roast Level Shapes the Character of Coffee

When it comes to coffee, roast level plays a defining role in the flavour you experience. As green beans enter the roaster, heat works its magic—releasing aromas, developing sweetness, and shaping the body of the coffee. The same bean can emerge bright and delicate or rich and bold, depending on how far it is roasted.

At H.R.Higgins, we roast with precision to bring out the best in every coffee. Whether you favour the fresh vibrancy of a light roast, the balance of a medium, or the deep richness of a dark, understanding roast levels will help you choose the perfect cup for your taste.

Light Roast

Light roasts preserve the coffee’s natural character, showcasing the flavours of its origin. Expect fruity, floral, or citrus notes with a bright, lively acidity. The body is light and clean—almost tea-like—paired with a gentle sweetness.

We roast light profiles to around 200–205°C, stopping shortly after the “first crack” to keep those delicate flavours intact. This style is wonderfully versatile, working well as pour over, cafetière, or even espresso for those who favour clarity over intensity.

Medium Roast

Medium roasts offer balance, blending the coffee’s inherent character with the deeper flavours created during roasting. You’ll find denser fruit notes, more complex sweetness, and a juicy, structured acidity. The body is medium and rounded, creating a smooth, satisfying cup.

Roasted to 206–210°C, medium roasts are a popular choice for both espresso and filter brewing. They deliver a pleasing harmony—sweet, smooth, and adaptable.

Dark Roast

Dark roasts are bold and full-bodied, with low acidity and a rich sweetness. Flavours often lean towards chocolate, roasted nuts, or warming spice. The texture is heavy and velvety, and the taste lingers long after the last sip.

We take dark roasts to 215–220°C, where oils begin to appear on the bean’s surface and the flavour deepens into indulgent richness. This roast is ideal for those who enjoy a strong espresso or a rich, comforting cafetière.

Which Roast Should You Choose?

Your ideal roast comes down to personal preference. Light roasts are fresh and vibrant, medium roasts are smooth and balanced, and dark roasts are bold and indulgent. Whatever you choose, our team ensures each batch is crafted with the same dedication—so every cup reflects both the quality of the bean and the care that went into roasting it.
