Now that the rush of Christmas is behind us, and the challenge of catering for family and friends — enjoyable as it is — has been safely managed. I am recommending a coffee I think you will enjoy, one that reflects a quieter mood, yet nonetheless is a highly flavoursome start to 2026: Honduras Marcala Community. An Arabica variety shaped by co-operation and dedication to organic farming.
Coffee was introduced by Spanish colonisers and European traders in the early 1700’s. Early cultivation was small, but from these small beginnings, the coming of the 19th Century saw a rapid expansion of the industry, becoming a vital export crop, until in 2011 Honduras became Central America’s leading exporter of coffee.
Honduras Marcala Community is produced by COMSA, a co-operative founded in 2001 by 69 farmers determined to produce quality coffee in harmony with the land. It is grown on the Montecillos mountain range under the shade of inga, citrus and banana.
In the cup, the character is smooth, and layered notes of chocolate meet the sensation of nuts and fruitiness. It has the plus factor of performing beautifully in all coffee makers: stove top espressos, bean to cup espressos, pour over filters, plunger pots. It is one of the most versatile varieties, whatever your method of coffee making. If you are discovering it for the first time, try it black; then, if you desire, add milk, hot milk or cream.
