You will need...

30g H.R.Higgins Blue Lady Tea

800ml of cold filtered water

Method...

Place 30g of H.R.Higgins Blue Lady Tea into a large jug. It needs to hold up to 1 litre for this recipe.

Pour 800ml of cold water (preferably filtered) over the tea leaves and leave in the fridge for at least 10 hours.

Remove the brew from the fridge and strain. You can do this by pouring the tea through a fine mesh strainer into a fresh jug.

To finish, pour over ice. Take a slice of grapefruit cut in half. Squeeze one half into the tea and use the other half to garnish.


Don't worry if the above proportions are too strong for you or you only have a small jug, you can simply reduce the measures by half to work for you.

If you like your iced tea to be sweet, a simple sugar syrup can be made, 1 part sugar to 2 parts water in a pan and bring to the boil to dissolve the sugar and form a syrup. Alternatively, you can add sweetness with a drop of honey. 

Remember! Cold brew tea is sweeter than if made using the hot brew method. Taste the brew before sweetening as you may need less than you think.


Top tip

You'll probably want to get another batch going straight away as it is very easy to get through in one afternoon! As with many of our teas, you can use the loose leaves for a second brew. Simply follow the method as above but for the second brew, we advise leaving the tea in the fridge to brew a little longer than your first batch.
