You will need...

H.R.Higgins Blue Lady Tea

1 litre of cold water

Method...

Place 5 tablespoons of H.R.Higgins Blue Lady Tea into a large jug. It needs to hold up to 1.5 litres for this recipe.

Heat 500ml of the water to 95 degrees and pour over the tea. Leave this to brew for 3 minutes.

Pour 1 litre of cold water (preferably filtered) over the brew and leave in the fridge for at least 10 hours. This brew can be left for up to 48 hours.

Remove the brew from the fridge and strain. You can do this by pouring the tea through a fine mesh strainer into a fresh jug. Keep the tea leaves to one side.

To serve:

Using this method of cold brewing the tea creates an infused concentrate. We recommend diluting the brew just before drinking.

Don't worry if the above proportions are too strong for you or you only have a small jug. You can alter the measures to work for you.

To dilute the tea, we use 1 part tea to 2 parts water.

If you like your iced tea to be sweet a simple sugar syrup can be made 1 part sugar to 2 parts water in a pan and bring to the boil to dissolve the sugar and form a syrup. Alternatively, you can add sweetness with a drop of honey.

Remember! Cold brew tea is sweeter than if made using the hot brew method. Taste the brew before sweetening as you may need less than you think.

To finish, pour over ice. Take a slice of grapefruit cut in half. Squeeze one half into the tea and use the other half to garnish.


Top tip

You'll probably want to get another batch going straight away as it is very easy to get through in one afternoon! As with many of our teas, you can use the loose leaves for a second brew. Simply follow the method as above but for the second brew, we advise leaving the tea in the fridge to brew a little longer than your first batch.
