You will need...

45ml or 2 measures of Vodka

30ml of your favourite H. R. Higgins Tea

1 teaspoon of fresh lemon juice

1 teaspoon of Agave of simple sugar syrup.

Method...

For our tea-tini, we suggest brewing your tea with hot water. This will allow a full infusion and will reveal all the characteristics of the tea. It is also much quicker.  You can brew just one cup or a pot. Add your leaves and pour over hot water. As a rough guide, use 100C water for black teas and around 70C water for green and white teas. Leave for three to four minutes to infuse. Once brewed, strain the tea to avoid it becoming stewed and leave to cool.

Take a cocktail shaker and add a hand full of ice.

Pour the Vodka, tea, fresh lemon juice and syrup into the shaker and shake well until well frosted.

Take your chilled cocktail glass and rim with your syrup before dipping in sugar.

Strain your martini into the chilled glass and garnish with a slice of lemon.
